MOFFAT, INC. DEBUTS COMPACT P10M PROOFER DESIGNED EXCLUSIVELY FOR E33 TURBOFAN OVEN

CHICAGO, IL (MAY 17-20, 2014) – Moffat Inc., manufacturer of commercial convection ovens, proofers and holding cabinets, introduces the new P10M proofer/holding cabinet designed exclusively for use with Moffat’s most portable convection oven, the E33 Turbofan Oven. The E33 Turbofan and P10M proofer/holding cabinet will be on display at the National Restaurant Show, May 17-20, at Chicago’s McCormick Place, booth #5021.

The E33/P10M combination oven and proofer bring the convenience of a proofer/holding cabinet and the versatility of professional quality convection cooking to smaller venues.

Along with the winning combination of two-speed fan cooking and carefully balanced moisture management, a core temperature probe kit is optional. The portable E33 is incredibly easy to use and has a stay-cool exterior, an ideal attribute in the tight environment of a modern kitchen. At a compact 24” (610mm) wide footprint the, E33 delivers a substantial five half size sheet pan capacity with 31/3” (85mm) tray spacing. The P10M proofer unit is formed exclusively to double stack with Turbofan E33 convection ovens, the fully insulated double skin cabinet ensures efficient proofing and an easy plug-in connection makes it easy to install.

The P10M unit has the capacity for up to (10) half size sheet pans or (10) 12” x 20” steam sheet pans, an auto-full humidity generator and holding cabinet function mode is standard with easy to use controls. A single speed fan gently and evenly circulates air around the cabinet while a thermometer clearly and accurately indicates the cabinet temperature.
