The Conservatorium’s big encore

Ali Group is the author of the kitchens in the most luxurious hotel in Amsterdam: the Conservatorium. A sophisticated blend of historical Dutch architecture and contemporary Italian design that takes the art of hospitality into the future.

Since its opening in June 2012, the Conservatorium Hotel in Amsterdam has become a preferred destination for luxury travelers, design lovers and locals in search of a home away from home.

Created in the building which was home to the Conservatory of Music, the hotel is located in the heart of the museum district and is extremely close to the city’s designer fashion row.
Piero Lissoni, the Milan-based architect and interior designer, oversaw the careful renovation and re-designing. Lissoni maintained much of the property’s original charm, including the vaulted hallways, terrazzo floors and teak woodwork.
The restuarant is run by one of Amsterdam’s most celebrated chefs, Schilo van Coevorden, who prepares his dishes under the gaze of curious diners, with only a large glass wall separating them from the kitchen.

Five separate kitchens
 
The kitchens were built by Metos Holland, a contract company of Ali Group, to a design by Gareth Sefton of SeftonHornWinch (www.shw-ckr.com).
Metos understood perfectly the needs of the hotel in terms of efficiency, work flow, flexibility, and number of meals and was able to propose innovative solutions that were more than the sum of its parts.
The five different kitchens satisfy every culinary whim of the hotel’s guests: one for the brasserie, one for Schilo’s restaurant, one for special events, one for room service and one for pastry.

Metos Holland was selected by The Set, a new collection of luxury hotels in major European capitals, such as the Caffé Royal in London and Hotel Lutetia in Paris.
